Goldrush Steak Supper

Emma Webb's Goldrush Steak Supper -

2 lbs beef chuck steak,
1 cup beef broth,
1 large onion,
4 medium carrots,
8 large russet potatoes,
1 teaspoon salt, fresh ground pepper to taste.

Peel onion, carrots and potatoes. Quarter onion, chop carrots and potatoes into thick slices. Cut chuck steak into 1" thick cubes. Tear off 2, 2 foot pieces of heavy-duty aluminum foil and place over a roasting pan. Place meat in the center of foil and fold sides of foil up; pour broth over meat. Cover meat with vegetables and season with salt and pepper. Bring the 2 length ends of foil together and fold down to seal. Roll each remaining side into small folds to seal. Bake in 450 F oven for 1 to 1 1/2 hours.

Pasta Salad

Emma Webb's No Name Pasta Salad -
1/2 onion,
1/2 green bell pepper,
5 eggs,
1 cup miracle miracle whip,
1 or 2 tablespoons mustard,
salt,
pepper and paprika,
1 box of pasta.

Cook the pasta and eggs. Cut up the eggs into slices or cubes. Slice the bell pepper and onion into small pieces. Once pasta has been cooked and drained, mix all the ingredients together. Add salt, pepper and paprika to your taste.

Spaghetti Aglio Olio

Emma Webb's Spaghetti Aglio Olio - Feeds 4 -
Salt,
1 lb Spaghetti,
4 Cloves garlic,
3 tablespoons extra virgin oil,
freshly ground pepper.

In a large pot, bring 5 quarts of water to a rolling boil and add 2 tablespoons of salt. Toss in the spaghetti and cook until slightly firm to the bite (approx 7-8 mins). Peel the garlic and cut into fine slices. Pour the olive oil into a large skillet and heat slowly - not so hot that it hisses! Saute the garlic gently in the hot oil. Pour the spaghetti into a colander and let it drain. Add the spaghetti to the garlic mixture in the pan and toss well. Season with salt and pepper.

Yorkshire Pudding

Emma Webb's Yorkshire Puddings - Makes 4 servings -

3oz Plain Flour,
1 Egg,
3 fl oz milk,
2 fl oz water,
salt,
freshly milled pepper,
2 tablespoons vegetable oil (for roasting tin).

Sift the flour into a bowl, make a well in the center, break an egg into it and beat it, gradually incorporating the flour, milk, water and seasoning (an electric hand-whisk will do this in seconds). Using a cupcake tin, pour a little oil into the bottom of each opening. Heat in the oven for 15 mins on 425 F. Once the oil is smoking, pull out of oven and pour a small amount into each opening. Return tin to the highest shelf in the oven and cook for about 25-30 mins until they have risen and turned crisp and golden. Serve as soon as possible as they will lose their crunchiness if left out for too long.

Hot Pretzels

Granny's Hot Pretzels

1/3 cup oil
1 pkg Fiesta Ranch Dressing (Dry Powder)
1 tsp garlic powder
1 tsp red pepper
1 tsp lemon pepper
Mix and heat the above ingredients in a pan.

1 bag twisted small pretzels. (May require 2 bags of pretzels)

Put a small amount of oil mixture in large zip loc bag. Put a small amount of pretzels in the bag and shake until the pretzels are coated with the mixture.
Remove pretzels from the bag and continue this process until all pretzels are coated. enjoy.

Poor Man Cake

Grandmother Florence Miller's Poor Man Cake

1 box Raisins
1 cup Crisco
2 Cup sugar
2 eggs

Cook raisins in1cup (maybe 2 cups)of water add sugar while raisins are cooking. Add Crisco after raisins are cooked.

Sift together
1 tsp cinnamon, 1 tsp cloves, 2 tsp soda, 1 tsp nutmeg, 1 tsp allspice, add eggs beat together. Add 1cup (maybe 2 cups)cold water.
Add 4 ½ cups flour.
Mix well
Bake at 350 degrees for 4 hr and 15 min.

Cream Puffs

Grandmother Miller's Cream Puffs


1/2 cup margarine
1 cup sifted flour
¼ tsp salt
4 eggs

Melt margarine and add 1 cup of water bring to a boil add salt and flour at the same time stirring vigorously. Cook and stir until mixture forms a ball that doesn’t separate. Remove from heat and cool slightly.
Add one at a time beating until smooth.
Drop heaping TBS full 3 inch’s apart on a greased cookies sheet
Bake at 450 degrees for 15 min, reduce heat to 325degrees continue baking for 25 min.
Remove from oven and split the top.
Turn oven off and return Cream Puffs to the oven and allow to dry for about 20 min.
Place Cream Puffs to a cooling rack.
Makes about 10

Filling for cream Puffs
2 boxes of instant vanilla dudding
2 cup milk
8 oz cream cheese
Whip together
With a fork spread filling on top of cool a Cream Puff.
Drizzle with Chocolate Syrup

Baked Corn

Betty Parrish's Baked Corn

1 can whole corn
1 can creamed corn
1 cup milk
1 egg
1/2 cup oleo
Cracker crumbs

Mix egg and milk stir until well mixed
Mix whole corn, cream corn with eggs and milk.
Stir in enough cracker crumbs to hold corm mixture together.
Put in Baking dish and sprinkle with cracker crumbs.
Cover with oleo.
Bake at 350 degrees or until brown.

Sheath Cake

Granny's Sheath Cake

Bring to a boil
1 cup water
1 stick oleo
1/2 cup shortening
4 Tbs cocoa
Let mixture cool

Sift together and add to cooled liquid
2cup sugar
2 cup flour
1 tsp cinnamon
Mix all the ingredients together by hand.
Add 2eggs,
½ cup of buttermilk,
1tsp soda
Bake at 350 degrees for 20-25 min in 9 inch rectangle pan. Check with tooth pick to insure cake is baked

Icing


Start making 5 min before cake is finished baking
4 Tbs cocoa
6 Tbs Buttermilk
1 stick oleo
1 box confectioner sugar (Powder Sugar)
1tsp vanilla
1 cup pecans
Bring cocoa, milk, and oleo to a boil, remove from heat and add nuts, confectioner sugar, and vanilla.
Add icing to cake while cake is hot.

Chicken Marsala

Eric's Chicken Marsala

Chicken Breasts [pounded]
2 cups marsala wine
1 cup of chicken stock or chicken broth.
mushrooms sliced [8 oz]
butter 1 tbsp
garlic [1 clove] minced
2 eggs
1 cup flour
parsley
1/4 cup heavy cream
1 tbsp olive oil
pinch of salt/pepper and oregano

side dish: penne pasta with red sauce..
pound chicken, beat two eggs and set aside a small plate of the flour
in a frying pan, sauté until soft, one clove of minced garlic and mushrooms in olive oil/butter - set aside

in medium sized pot, add chicken stock and bring to a boil. add marsala wine, salt, pepper, oregano.
reduce heat to low/medium and add 1 tbsp butter, add cream.
cover and reduce to low heat, until thickened

chicken: dip pounded chicken in flour then beated eggs, then flour again. place in frying pan,
brown/cook chicken on both sides. add marsala sauce to chicken, cover and simmer for 10 minutes.

serve with side of pasta

Chili Cheese Quiche

Chili Cheese Quiche Recipe

10 Eggs beaten
½ cup flour
1 tsp baking powder
1 tsp salt
1 lb. white cheese shredded
16 oz. small curd cottage cheese
4 oz green chili’s diced
½ cup or 1 cube margarine
1 lb. bacon or sausage
Pepper to taste

Prepare meat as suggested
Preheat oven to 400 degrees
Melt margarine in baking dish and swirl around to coat sides. Set aside and let cool.
Mix together, in a separate bowl, the eggs, baking powder, salt, pepper and flour. Fold in cheeses, meat and chili. Pour the cooled margarine into the mixture and mix together. Pour entire mixture back into the casserole baking dish and cook at 400 degrees for 15 minutes, uncovered. Reduce temperature to 350 degrees and bake an additional 30 to 40 minutes.

Cranberry Conserve

Granny's Cranberry Conserve

1 Cup water
12 to 16 oz cranberries ( fresh or frozen)
1 cup sugar

Boil the above items until cranberries start to pop.

1 orange peeled and cut up
½ cup raisins

Add to the above mixture and boil 5 min or until the mixture starts to thicken .
1Add 1 cup of nuts (pecans, walnuts or your choice of nuts).
Chill and serve and enjoy.

Nangy's Oatmeal Cookies

Jewell Edward's Oatmeal Cookies

3 eggs well beaten
1 cup raisins
1 tsp vanilla
Combine eggs, raisins, and vanilla let mixture stand 1 hour.

1 cup shortening
1 cup brown sugar
1 cup granulated sugar
2 1/2 cups sifted flour
1 tsp soda
1 tsp cinnamon
1 tsp salt
2 cups rolled oats (Quaker 1 Min oats)
1cup chopped nuts
Thoroughly cream together shortening, brown sugar, white sugar, sift flour, salt, soda and cinnamon into sugar mixture mix well. Blend in eggs, raisins, oat meal, and nuts.
Dough should be stiff enough to roll into little balls. Flatten just a little, bake on cookie sheet in a 350 degree oven for 10-12 min. (Do not over bake.)

Buns

Grandma Miller's Buns


2 cups warm water (100 degrees)
¼ cup sugar
1 tsp salt
½ cup Crisco
2 tbs yeast (2 Packages)
dissolve yeast in the water
Mix adding enough flour until the mixture isn’t sticky.
Place dough in a covered bowl, place in a warm place and allow to double in size.
Make into buns and place in baking pan, cover and place in a warm place and allow to double in size for the second time.

Bake at 400 degrees until golden brown about 12-15 min.

To have a hard crust just cool.
To Have a soft crust lightly coat crust with Crisco

Grandmother Miller's Pigs In A Blanket

2 lb hamburger
12 serving rice (6 cups)
1 lrg bottle ketchup
1 ½ head cabbage
1 jar sauerkraut

Mix hamburger and rice in a pan
Steam cabbage (so leaves can be removed one at a time)
Take one leaf and fill with a small amount of rice and hamburger then wrap leaf around the mixture
Place in a large pan continue until one layer is filled.
Cover the layer with sauerkraut then cover with a thin layer of ketchup
Repeat this until the hamburger and rice are used up

Cover and bake at 350 degrees until brown around the edges and rice is soft and hamburger is cooked. (about 2 hrs)

Cherry Tart

Dough
1 cup Crisco
½ cup sugar
2 eggs lightly wiped
½ cup sour milk
1 tsp vanilla
4 cups flour
1 tsp salt
½ tsp baking soda
1 tsp baking powder
Combine the above list of ingredients into a stiff dough.
Divide dough in half
Roll to ¼ inch thick and place on cookie sheet and roll edge up.

Filling
2 cans cherry pie filling
Put filling on prepared dough
Roll second half of dough to ¼ inch thick and use as a topping to cover the cherry filling. Pinch the sides to seal. ( prevents leaking cherries)

Bake at 400 degrees until golden brown15-20 min

1 cup brown sugar
1 cup white sugar
½ cup Crisco
2 eggs
1 cup sour milk
1 cup boiling water
Mix and let cool
Mix remaining ingredients and add to the above
1 tsp vanilla
4 cups flour
2 tsp baking soda
½ tsp baking powder
½ tsp salt
½ cup cocoa

Bake at 400 degrees for 8-10 min.

¾ box of powder sugar
¼ lb oleo
1 egg
¼ tsp vanilla
Add just enough milk to make a thick paste
Cool the cakes place filling between two cakes
